Chicken shawarma is our top seller at all locations, and it only makes sense to make it our first authentic middle eastern recipe. If you are new to the kitchen here are 8 guidelines, we recommend you follow to get started.

Cutting Chicken Breast

  1. Assemble all ingredients in an organized manner
  2. Have several dishes to separate ingredients
  3. Have a sponge/or clothe for easy clean ups
  4. Wash cutting board between steps
  5. Have a separate cutting board for raw meat
  6. After completion sanitize cutting board with a chlorine solution
  7. Avoid using dull knives to refrain from excessive force when cutting
  8. Have patience’s when dealing with raw food, sharp objectives, and heat

How to Make Authentic Lebanese Chicken Shawarma

Cooking Chicken Breast

Ingredients:

  • 1lb of boneless skinless chicken breast
  • 1lb of boneless skinless chicken thigh
  • 6 separated tbsp of olive oil
  • 2 tsp cumin
  • ¼ tsp garlic powder
  • 2 tsp paprika
  • 1 tsp all spice
  • ¼ cayenne
  • ¾ tsp turmeric
  • ¼ tsp cinnamon
  • Salt and pepper to taste

Equipment:

  • Baking sheet and skillet both are required for optimal cooking techniques
  • Cooking utensils like spatula and tongs

 

Instructions:

Marinating the Meat

  • On a clean cutting board slice the chicken thighs and breast and to similar sized medium pieces. Place the now sliced meat into a marinating dish or large sealable bag.
  • In a separate small bowl combine all the seasoning along with a quarter cup of olive oil (the olive oil will bring out the juicy flavours in the meat). Continue to whisk these all together until combined.
  • Once the seasoning is thoroughly mixed, pour the marinate all over the chopped chicken and coat evenly by mixing with a spoon.
  • Place marinated chicken covered with plastic wrap or sealed in a bag in the fridge for 1 hour or more. (The longer the marinate, the more authentic the flavours will be)

Cooking

  • Preheat oven to 375F degrees
  • Lightly grease pan or baking sheet as oil is already in marinate
  • Once oven is heated place chicken on baking sheet and cook for 20 minutes
  • Place chicken in skillet, once cooked and sear on each side for 5 minutes until nicely golden and brown/ with a slight char
  • Let rest for 5-10 minutes

To Serve

  • Slice chicken to desired length and thickness
  • Serve chicken on platter with flatbread to roll up
  • Or place on rice with yogurt sauce or preferable garlic sauce for us
